The Health and Hygiene Safety of Foods, and of Materials and Articles Intended to Come into Contact with Foods Act (ZZUZIS,) stipulates in Article 17 that all legal and natural persons, who are engaged in the production and marketing of foods and the public supply of drinking water, must monitor and ensure their health at all stages of production and transport in internal control. Internal control must be established on the basis of the HACCP system, which allows the identification of microbiological, chemical and physical risk factors that may pose a health risk.
